Olivier Collin of Ulysse Colin, located in Congy in the Côteaux du Petit Morin, is renowned for his meticulous focus on single-vineyard, single-varietal Champagnes that emphasize terroir over blending. Since taking over his family’s vineyards in 2004, Collin has championed organic farming and minimal intervention in the cellar. Each vineyard plot is vinified separately to capture its unique character, and fermentation is carried out with native yeasts in a mix of small oak barrels and larger foudres, which impart texture and depth without overwhelming the fruit. Collin’s Champagnes are aged extensively on the lees and typically bottled with little to no dosage, resulting in precise, mineral-driven wines. Known for their vibrant acidity and structured complexity, Ulysse Colin’s Champagnes offer intense flavours of citrus, stone fruits, and chalk, with each cuvée reflecting the nuances of its specific site.
